I didn’t know what to call this post, but I am having a lot of fun, uncooking and preparing for my interview coming up.

Lately I have been so busy trying to get everything together, I feel like I have neglected to share what is going on with me. Well lately I have been focusing on exercising and making simple nut free recipes. Recently I made Russel James Zucchini wrap, well he calls it cabbage pillows, but I didn’t make the entire recipe, I only made the zucchini wrap and I love it, it is a great alternative to nori. check out this yummy recipe.

As most of you know I have a interview coming up with Mattye Lee Thompson, I am really excited about it, I can’t wait to talk with her and ooh I must say I made her Rice bowl recipe recently, the sauce is to die for… hmm so good you have to try it, check it out here.

So right now I am just trying to exercise and release more weight and get ready to spread my wings next year. I would love to give some talks in different locations, but that will come soon enough.

I thought I’d share my food diary with you today:

I had:

Breakfast - Two banana’s

Lunch - Zucchini wrap with, green leaf lettuce, cucumber, avo, seed cheese, cilantro, and green onion

Dinner - Veggie Sushi and later tonight a Green Juice

Snack - Corn chip salsa and Guac
